First of all, Apple official release notes:

“This seed adds new natural-sounding Siri voices for English (Australia), English (United Kingdom), Japanese, and Chinese (Mandarin – China).

The iOS device initially uses a compact voice for Siri. After you have configured a Wi-Fi network and have the device connected to a power source, iOS will automatically download and install a higher quality version.”

Second change, according to MacRumors:

“Wallpaper options have also been tweaked slightly and the button to disable parallax is now called “Prepective Zoom” instead of “Motion”.

Third change in iOS 7.1 beta 5:

“iOS 7.1 beta 5 includes a redesigned shift and caps lock keys on the keyboard. Screenshot shown below with detailed information.”

keyboardchanges                                                                                                                              Shift enabled (left), Shift disabled (middle), Caps lock enabled (right)

Fourth change in 5th beta of iOS 7.1:

“iTunes Radio has a new “Buy album” button in addition to the button that lets you buy the individual song”.

Fifth change that discovered in iOS 7.1b5:

Finally, Apple has patched yet another exploit used by evasi0n7 in iOS 7.1 beta 5. Which enables the blocker to not able to update to the iOS 7.1 GM, if already jailbroken on iOS 7.0.4 or 7.0.5 devices. Check this post for more information.
